Welsh rarebit

If you’ve never heard of Welsh rarebit before, I can safely tell you, this recipe will change your life. It’s one of the greatest comfort foods I have ever found and can be made in about 10 minutes. There are plenty of recipes out there, some call for egg yolk to help enrich the flavour and thicken the mixture, others use a white sauce as a base but of all the ones I’ve tried this is the recipe which I find gives the best taste. If you're not a fan of French grain mustard you can use mustard powder or a smooth English variety. Make it your own... but definitely make it!

Serves 2

Ingredients
150-175g mature Welsh cheddar cheese, grated
25ml/ 2 tbsp milk (or Welsh beer/ale if you’ve got it in)
1 tbsp flour
1 tsp French grain mustard
A good dash of Worcester sauce
Pinch of black pepper
Pinch of smoked paprika (optional)
2 slices of thickly sliced white bread

Method
Preheat the grill to a high heat.

Put the cheese and milk into a small saucepan on a low heat until the cheese has completely melted and is smooth. Add in the mustard, Worcester sauce, black pepper and smoked paprika if using it.

Next, stir in the flour and keep on the heat for a minute or two until it starts to thicken up. Meanwhile toast the bread and put in an ovenproof dish or frying pan which is oven safe.

When ready, spoon the cheese mix over the toast and put it under the grill for a few minutes until the top is golden and bubbling.

Serve with an extra dash of Worcester sauce and a bit of salad.
